I have miles too many bloomin knives and I am doing my best for the Chinese economy getting loads of budget sharpies from Aliexpress, Alibaba, DHgate and Banggood and my friends in Chinatown etc - I like a bit of variety to my choppers and slicers and my gf collects Japanese and Asian style knives and scissors.
All the 7 knives in the top picture were less than 60 bucks - the second one up (the santoku) was only $18 and it`s a procook in X30 (weighs 6 ounces) and the third one up (the kiritsuke) with the hammered 440c blade and dark wood handle was only $5 (weighs 7 ounces) - total bargain haha !
It is sharpies from everywhere - I`ve traveled all over since the late sixties.
I`ve just got some Chinese ceramic scissors and two santoku / scissor things - which are great and a few budget ones are on their way from the Far East - the two bottom pictures are genuine damascus and HRC 61 - they are gonna be so crammed in their little boxes in my teeny-weeny kitch - haha !
I am not going to be over picky and churlish for my modest outlay - the 2 bottom ones were a total steel - haha !

What's the little guy, bottom of the top picture?

Oh the little guy - the 4" cleaver Wagner haha - a lady friend thought it was cute and I got her one from aliexpress and I went round to her house and tried it - absolutely fine - steel is a bit soft like a mini Kiwi - low - mid fifties ? dunno - so I got one.
The deep pattern of the bumpy blade stop food sticking so works great.
It cuts 4 lbs of onions accurately without needing to use a steel or a touch up on a #400 diamond stone - so job`s a good `un.
It comes with a fitted faux leather pouch as well - cost - less than $6 shipped.

Is that just etched or textured?

  6. I don`t know - a bit of both ? - I don`t know exactly how they make them Wagner.
It`s got texture for sure - maybe some sort of advanced stamping initially - then stock removal and laser etching ?
    I don`t know the processes - not a clue.
It`s described as forged but I don`t know how at that price.
