This is a great excuse to have a second wedding the wife would be so excited about... you know thinking it was for her

Ed, the problem with the 2 stores you mentioned is that they only carry middling knives, for the same monies you could get substantially better ones piece by piece form a dedicated vendor. Don't know if you have a friend willing to shop outside the "big box" but if so we could sort out a few suggestions.

 

Solid advice if you can afford it...

 

Open up a registry with Sur la Table too. They are nationwide and have a much better selection of the better production knives available. The Miyabi Birch is a gorgeous and very functional line that they carry. Well worth the look. I agree that an entire block set will go to waste since most won't be used. The discount they make on those make them tempting but you get what you pay for. Pick 3 or 4 knives that you and your better half will use. A chef, a petty/utility, a paring and a bread knife seem like a great start. Good luck
