    wow i thougth i woud joke about this but dam. love the 45 degree angle set at first then the ceramic at what has to be 60 per side. NUTZ i have nothing even close for this

    If that is a portable vise, I'd hate to see the shop model. But it is clearly labeled "portable vise" so I learn something new every day. Each day I am exposed to new artisans who make my failings clear. Wonder if he does mail order?

    That had to be a special sand paper, designed to not abrade the blade faces... just hitting the bevel.

    So after watching the first video, I have one side of my 240mm Hiromoto AS gyuto ground. It's a B&B group buy knife that Dave thinned and etched. I'm trying to make it symmetrical now. I'm really starting to wonder how I'm going to get these deep scratches out of the blade and how long it will take to strop the chips out of the edge. This will also be my first re-handle job. I'll follow up with some photos soon.

    I wonder what mental math was used to determine using sand paper AFTER the ceramic rod? That might work for a beater machete tho as I use a grinder to sharpen my chipping gun chisels.
