255mm W2 Gyuto 'Laser'

  2. I thought I'd give you guys a good laugh here :). I make a knife that I'm concerned with the stiction (even though I did all I could to make sure it would separate food). I then cut a bag of potatoes, and am amazed at the utter LACK of said stiction. This makes me think...'HEY!! I should make a video of this for my friends over at KKFa!!'

    Sooooo...I make said video. First cuts go great! Then I open my mouth and say 'It doesn't stick to anything!'...point the camera to it, and bam, it's now made of super glue.

    Anyhow, here you go for entertainment value, lol:

    You could thin mine down, but we'd have to figure out how to deal with the balance.
     
  4. Yours doesn't cut a hell of a lot differently lol. I'll measure and compare the thicknesses of the final 1/3 of the knives tomorrow.
     
  5. Wow, very impressive. Nice looking knife even without the handle, and it literally slides through the potato. You must be proud of this one! Great work.

    I tossed one of my buckeye handles from my last ko-gyuto on it to see how it felt, and I like it a lot. The wood suits the plain nature of the blade I think, and the lightweight wood puts the balance point right at the heel. It feels nice in hand :).

    Chefu, it's 51mm at the heel. The balance point with that handle is precisely on the heel.

    I also wanted to let you guys know that this knife sold yesterday to a previous customer. I was able to crisp up the heel area that had concerned me without issue.

    I really can't wait to hear his thoughts :).

    I really like the beast :) I wouldn't call it ugly but there is something really rough about it...in an appealing way I think.
    +1 on "big sexy".

    I've got to say it's really got a dual personality. Appearance wise it's a serious bruiser, like a tank...but it's light and fast and nimble and accurate as well, like a fighter jet.

    It's a weird knife.

    I've really come to like it a lot, lol.

  16. /sigh! Big Sexy it is then. Just know that I'm still going to call it 'Big Ugly'.

    I had a friend once who had literally THE ugliest little sister I'd ever seen. Her nickname was, well...lets just say it wasn't flattering, and even her mother called her by it (affectionately of course).

    The last time I saw her, she was drop dead gorgeous, and they were STILL calling her by that nickname, lol.

    Rami, I'm pushing to get three separate passaround knives done asap! I'd like to get one going in Canada, here of course, and then one that's going to Europe for bien to look at, and then down to you guys.
     
  17. Finally got some work done on this beasty!!

    The knife sold to a member here, who'd purchased my previous gyuto-hiki from Son. He requested that I make a handle for it to match the smaller knife. Now...the wood that I'd used for the gyuto-hiki came from Stefan Kellar's personal collection, and was bought through Myron at Dream Burls. It's the only piece like it I'd ever seen...but!!...I had a piece of grey wood that I thought could pass for a color match, as well as a piece of the original spacer wood leftover. Wellll...that matched grey piece split right down the middle while drilling it out for the dowel. I spent almost two weeks looking for another...and was incredibly lucky to actually find something. It's not exact...and is even different than the piece I'd found initially to match, but I think it's even more beautiful than the original if possible. I'll let you guys decide...just keep in mind that my new camera doesn't seem to translate colors as I'd prefer it did...so everything seems a bit washed out. There's some really cool stuff going on in this piece of wood.
