    Some prep work to cook tomorrow.We are holding a pork butchery class so ya need to cook some pork of course! One piece of of butt soaking Cuban style one rubbed for the smoker. I will share more tomorrow!

  11. Wow..you can miss a lot in a few days. 5 guys burger decimation, pork marination, awesome chili/stew/not even going to go there, and what seems like a budding road trip to down under!

    I make a simple brine and add a bunch of citrus, garlic, Thyme, and rosemary. I think that is about it. Soak for a day or so then slow roast! Makes for a great Cuban sandwich! Really simple, really fresh.

    Simple dinner tonight, muscovy duck breast to go with clay pot rice with duck liver lap cheong, and a few other small things.

    Here's a few from last week.
    The first is a Tri-Tip that was smoked for a couple hours on top of mashed potatoes with a hint of whole grain mustard, and sauteed asparagus with balsamic reduction.
