James' 270mm W2 Honyaki 'Live Edge' Gyuto-Hiki

  1. This knife is the result of a good friend (it seems most all of my customers somehow become 'good friends' during this process, lol. Another perk of the job!) and moderator here at our lovely Fora @James, contacting me about purchasing one of my 'stock' knives. We went back and forth a little on wood choice, but ended up choosing this incredible piece of buckeye burl. I suggested possibly incorporating the live edge, and he replied with 'As long as it's bad ass, and will hold up to use, go for it!' lol. Then when I cut the block open and found the huge inclusion on the other side, I almost scrapped the idea entirely. Luckily though, I decided to push through, hoping it would add to the image in my head...of the handle slowly rotting away. To this I added 165yr old wrough iron spacers, and copper liners reclaimed from the remodel of the main building at the nearly 100yr old high school I went to (Peoria High School, Peoria, AZ). The result couldn't have been a better match for the picture in my head :D.

    Anyway!

    270mm edge, 49mm heel, 172g, with a balance point of approximately 1cm in front of the heel, making this a very lively cutter with enough forward balance to be comfortable despite its light weight.

    Steel: AISI W2 from Aldo Bruno at New Jersey Steel Baron
    Handle: Stabilized (K&G) buckeye burl, with 165yr old wagon wheel wrought iron spacers, and reclaimed water piping liners.

    Man is that some photo knife porn gone wild there,... nice black background btw lol. That is the most beautiful bad uhhh butt* knife I have ever seen. That thing came out amazing. Ill have to keep it in a separate place then my other knives, I dont want them looking at it !

    I wanted to show the taper of the spine a bit better. At the ferrule it's around 2.7mm if I recall. Between 2.55mm and 2.7mm for sure. Keep in mind that the thin spine is in no way an indication of the actual blade thickness (this seems to throw people a lot lol).

    A few tip shots, inspired by Robert. That's a US quarter, which is about 1.75mm thick. Spine thickness 1cm from the tip is right around .58mm.

    Anyhow!! Hopefully James will update with his own pictures here in the next week or so!
