240mm San Mai gyuto

    I believe this guy deserves it's own thread .
    240 mm sumingashi gyuto forged from takefu shiro core steel , water quenched around 62-63 hrc . I have managed to manipulate the pattern little bit more to my liking , the blade is 240 mm at the the edge ,47.1mm tall a the heel and 2.95mm thick . The knife weighs 211 grams and the balance point is just in front of emoto . Although it is thin for my standards there isn't much flex what so ever . It is slight asymetric grind , the edge is one of the thinnest I managed to put on a blade for ease of cutting while keeping the spine relatively thick with distal taper
    The handle is something I don't usually do . I decided to go all out with this one . Musk ox ferrule, end cap , double copper and walrus tusk spacers and mallee burl . Managed to match the grain of the ferrule with the handle as well

    Mert it's a beauty. I notice in most of your knives a stockiness that while not quite pushing my buttons, seems to speak to getting the job done. I always suspect it is my ignorance about what a chef really want's/needs in a knife. this one however has me salivating. While still looking all the business, has a lighter sleeker quality to it. really makes me want it. Of course I want a Ferrari too:oops: Well done

    I want this one so bad. the damascus makes it so I cannot use so I have to pass. Its so damn beautiful though mert. Your work has come so far and so fast. AMAZING!!!!
