195mm stainless San mai gyuto in 52100

    This gyuto was rough forged at Bill's shop during my visit few months ago , I just had the time to finish it . It is stainless clad 52100 , triple quench and triple tempered . 195 mm at the edge 49mm at the heel. Sight asymmetric ground for right handed user

    The core showed up bit more than I like but now it looks pretty cool IMO .The handle is western style ,brass bolster and needle wood burl , it was my first time using this timber but I am pretty happy with the figure and the result . It felt somewhere between beefwood and cocobolo
