What's cooking?

    Had a "don't ask don't tell" lunch today. If hubby doesn't ask what I had for lunch while he ate cafeteria food at work, I'm not going to tell him! Came in from pulling thistles and blackberry vines all morning and nothing looked good in the fridge until I found a little tenderloin in the meat bin. Then add some mushrooms from the farmers' market in a mustard cream sauce. And some wine to soothe the aching muscles. I'm going to miss this when he retires.

    I had a Bear Naked bar and Pringles chips. But that's normal for me. My lunch at work is typically just a Clif bar.

    I've been super busy working on the house as of late. Took some time early one morning to enjoy the balloons while working on the fence:

    And not to derail the thread, but here was dinner later that night. If anything, this would be my signature dish. Coriander crusted steak over rice, with caramelized onions and green bell peppers. I have a few variations of this, but for this one, it was a quick homemade salsa to top it off.

    It was a pretty great day! Lots done, great scenery, and amazing food. Can't ask for too much more...

    The loin muscle (longissimus) runs all the way from the porterhouse, t bones and rib eyes all the way forward to the chuck. If you have a decent butcher , they can pull out a killer little roast from the chuck pretty cheap . It has lots of names but I call it a chuck eye roast. Maybe someone can correct me. It's the same muscle as a rib eye. I rubbed this in a mix of mustard and olive oil, sprinkled it with seasoning, charred it and sous vide for 12 hours at 136. Will probably sear again before serving. image.jpeg

    Feeding 7 with plenty of leftovers
    After 2 hours @ 160c rested for 90mins

    Next time I would sear the meat before it went under the salt crust, and I'd cook it for half an hour less and rest it for half an hour longer.
    I was pretty happy with it though, very moist & well seasoned

    On my buy list, too. Never heard of it, but the pasta hound husband will love it. I would eat leftovers like that on a regular basis.
