220mm western gyuto for sale

    Last knife I have finished , available for immediate shipment, it is 220mm gyuto forged from 52100 . 52mm tall , with This one is slight asymmetric ground for right hand user , very stiff , very thin behind the edge but with substantial spine (3.4mm at the bolster )and very good distal taper( less than 1mm an inch before the tip ) . Handle is stabilised needlewood burl , An Australian hardwood that feels like bubinga with lot better figure and tighter grain . Bolster is nickel silver . Balance point is right at makers mark for pinch grip . Blade is hand finished to 1500 grit , feel free to ask any questions you may have
