    Misono carbon parer. Out of these I own. I could sell every single knife I own without second thoughts apart from this little fu**er.

    If thing would be about ordering a new blade and throwing what I have at home out, I would order custom Kato real-damascus in a weirdo-santoku shape very high and with a pointy tip [I could then sit for hours polishing it with thousand different fingerstones]
    Kinda 210 Takeda shape, I recently thinned one of these, and I think its crap knife but with winner blades shape.
    I would then like ebony handle with black horn ferrule to top it up.

    Probably my Kato 240mm gyuto prototype, but I can't say for sure. Some days i enjoy other knives more and some days I enjoy them less.

    man, I gotta look into getting me some rader....
    if I really had to do only one, I'd stick with a masamoto 270 gyuto - it's become a complete do-it-all knife, even more than the kato.

    what if you are going somewhere remote and you need a one-knife-to-do everything ? any recommendations? i went to Italy last year and we rented a old farmhouse and i took a 200mm Mr Itoh knife as my one knife. BAD choice. The landlady gifted us an free range (dead) chicken from her farm and the Mr Itoh dented its teeth just trying to cut the chicken neck. No hacking, just placed the knife on the neck and a short blow from my palm. End of knife. Needed serious re-modelling to fix it. Maybe the Sabatier is a hardier choice

    Someone make a swiss army version of japanese knives... then ill pick that one, ill take a carving fork instead of the plastic toothpick too

    If we take 'all circumstances' all the way, than the ideal knife would be a heavy ryo-deba I guess, what do you think? Would you bring something like that next time?

    Well now that I actually have one good knife, guess my Masakage Yuki Nakiri is it lol, but we shall see once DM's modified Hiromoto Gyuto gets here

    The answer is yes. I think perhaps only because I was wielding a knife at the time. Farmers seem to loose all logical thought when encountered with a knife carrying vandal at midnight....who knew?

    Its not like your stealing them, and you figure cutting them down would make them easier to transport... doing them for a favour in a way

    Toss up with my 270 Devin Thomas itk, or Mizuno 270 tanrenjyo. If for zombie killing it would be the DT. If not then the Mizuno, it is very fragil.

    9.5 inch Sabatier if I had to choose one but since I don't I will carry my big knife roll around for a while.

    if I can only get 1 knife.....
    I want a "does it all" gyuto!
    it will able to use on any task, no food reaction & easy to taking care(carbon is out).
    a gyuto has good edge retention, can take care both tough & delicate cutting task(laser & aeb-l steel is out).
    a gyuto I can use/treat roughly no need to baby it(expensive fancy custom & Damascus knife is out)

    Only 1 knife, for all jobs...then I have to exclude all my Guytos then as they are too lengtly for some tasks.
