Do Kirotsuke Gyuto's Just Look Cool?

    or do they have advantages/disadvantages over a regular gyuto ?, Im talking the double bevel varieties here

    None that I'm aware of. Just a different tip. Sometimes they have a torch more belly in the blade b but that varies.

    In generally speaking, K-tip gyuto has more flat profile & narrower blade height than traditional gyuto.
    two advantages are cooler looks, and more flat edge length for push-cutting.
    two disadvantages: flatter profile is less versatile than the traditional gyuto & narrower blade height is less convenient to scoop up the foods from cutting board.
    IMO, the traditional gyuto is more versatile knife.

    the tip is nice and the flatness is nice. otherwise the regular gyuto is the best knife for all around use in a kitchen. I would not recommend a kiritsuke gyuto to anyone that isnt purely badass.
     
  5. In my understanding a Kiritsuke tip combined with a flat profile would make an extremely fragile configuration as far as the tip is concerned.

  7. The flat profile and ultra thin tip is nice for drag slicing. Other than that well... they still look cool, though.

    I like mine more than a standard gyuto. I just tend to gravitate towards it. I don't rock chop, so the flatter profile fits my cutting style. But truly it comes down to personal preference, some love them, others hate them.

    plus about $150 custom handle & hours work time(remove Kurouchi finished & mirror polish):confused:

    that handle was quite a bit cheaper than that. but yes, it has a ton of work put into the blade. the edge on the knife is definitely where it should be at for a cheap knife like that. it takes a lot of work to make it something nice.

    in total i have 120 into the knife plus probably about 20 hours of sharpening at this point.

    I put a mirror polish on my ITK Gyuto. Then I slipped sharpening it and scuffed it...
