I have a Shigefusa Kasumi 210 Gyuto, several Hiromotos, a Suisin carbon 270 sujihiki, a Masamoto gyuto, a Masakage bunker bocho, and an Akifusa gyuto. I sharpen with a burgeoning collection of Japanese waterstones.
