Hiromoto stops

  1. Mr Nagao, maker of the Hiromoto knives, has ended production of new batches of his regular series, Gin-3, Aogami Super and VG-10 Damascus blades, Mr Koki Iwahara confirmed.

    Just put in an order for a couple of petties, still regret selling mine... Have a gyuto in 180, 240, 270, that should do it.

    Love the AS Dave thinned and rehandled... want a 210 and a 270 suji. I know in kind of SOL on the suji.

    Great edges that's fir sure.

    The replacement is in production already, although never got so popular.

    Im actually glad I sold mine. It was never a better blade than my handmades in any aspect. The steel too soft, feeling weird when sharpening, edge ok but the best bite lasts short, and chunky bastards they are.

    But, as a project knife, I would like to get my hands on a 18cm chefs.
