    I actually have a rabbit in the fridge right now. It's going on the smoker later today.

    That looks awesome Jason. How long did you smoke it for? Do you just grab a knife and go to town, eating it, or is it an ingredient for something more?

    Actually my son smoked it, about 3 hours at 225 F. A friend of his asked him to smoke it for him, so I don't get to try it. I wish I could be at the middle school tomorrow when they pull that carcass out in the cafeteria in front of everyone!

    I love rabbit stew. I cut the rabbit up into pieces, dip it in flour, and then brown it in a large saucepan. I add to the mix some carrots, onions, celery, salt, pepper, and a by leaf. I water and red wine in a 3:2 portion to cover the rabbit and vegetables and simmer it for about 2 hours. I then add small red potatoes and stew it for another 45 minutes. Finally I add some sliced mushrooms. If you want a thicker sauce you can add some corn starch but I prefer the natural juices.

    My brother-in-law who is an avid hunter likes to fry rabbit in olive oil. First he dips the rabbit in an egg wash and dips it in Italian seasoned bread crumbs.

    Apparently the smoked rabbit was a big hit. They shared it with several other kids who were curious when they saw it. I was half expecting a phone call from the principal today.

    It also helps that they are in the midwest/great plains proper. One reason I loved SoDak. :)
