Custom Steak Knives?

    I went through some recent food mags and e mails. I've seem some pretty mediocre knives of average steel for what seems like a boat load of money. Although probably discussed before, are any makers actively doing steak knife sets with decent steel like AEB-l or similar. I recall Butch and Randy doing something a while ago. Curious if there was anyone else with an interest
     
  2. I would love a nice set but we still use porcelain/ceramic plates for our steaks so I just grabbed a couple of cheap parers/pettys to use, I am still trying to persuade the Mrs that wooden plates are a good idea, not having much luck so far though:confused:

    I have some in Aebl coming , they will be thick convex grind , with ringed gidgee handle and brass tip similar to my western handles but slimmer

    Contact Butch. He does batches of ss steak knives every now and than. I think his preferred SS is the Carpenter XP
     
  5. I would be in for a set of at least 4-6 if you got something going. I too wondered if anyone does them. I was halfway thinking of buying some pre done blades and trying my handle making skills on a set.

    This is probably just me, but it does not seem like the ROI for the maker is all that great.....grinding out, polishing/finishing and handling six identical 4 inch blades....probably takes a similar amount of time to knock out 6 gyutos, but I could be wrong.

    not much margin on steak knives. they are kind of a perk for guys that have other knives by me or retailers. i can tell you this classic is not making much at all on that price
     
  9. I wouldnt mind doing a batch of 4 or so in aeb-l but I cant get started until Jan or Feb
