  2. hi everybody.
    I am a chef at a 5 star restaurant. Technically, I'm not a chef yet, but I'm called chef, and I do much cooking.
    I'm here because I have developed an interest in knives. I have always carried pocket knives- balisongs, and such. I know a fair bit about maintaining these,I know how to buy one, what to look for, etc.
    recently, since I began this job, upgrading from a job where cooking would be a bit of an exaggeration- I have been using a knife several hours a day. This had led me to realize that my knives are garbage.(the ones at home). After a few months of going from the razor sharp knives I work with, to cooking at home, I decided I must upgrade my cutlery. Kitchen knives don't seem to be as straightforward as folding knives. My search for answers led me here.

    I will create a thread on the subject but would love recommendations for a cheap/moderately priced 8" chefs knife. I'm looking for a hard steel, I want something that can take and hold an edge. My current knives will not. Not very well, and this makes me crazy.

  6. Welcome! What are the knives you have with which you are not happy and looking to replace?
     
  7. they are some bull crap is what they are. I have some grand gourmet, a few Chicago cutlery, which aren't terrible, a Hampton forge and several with no name I can identify.. I have one knife, 8" chef knife with what looks almost like an m engraved on the blade. That is the best, but it still won't hold much of an edge. So, basically a bunch of crap. I'm hesitant to buy anything else, because I don't want to end up with another junk knife, and the only ones I have any faith in are just too expensive.
