    It's incredibly comfortable and designed to be held like a dagger and the blade drawn toward you through the meat.

    I sharpen for a few butchers , they would freakin love this knife. It looks like there may be a little flex towards the tip of the blade?

    I don't remember there being much flex in this blade. But it will certainly rip through meat like a hot knife through butter. And stays sharp longer.
