Not a lot to write right now...both are Kurosaki Yu knives...the nakiri is a standard random tsuchime in R2 and the gyuto is his new "sasame" (sasa is a kind of bamboo) model in Cobalt Special.

  4. That gyuto reminds me a bit of the R2 gyuto by Kurosaki that could be found at clearcut.se. Would you care to tell us where you found it?

It is a different steel (Cobalt Special; probably the same as Fallkniven's) and seems to be a somewhat different geometry than the R2 Shizuku, and the pattern is very different as well. This was through Knifewear in Canada, though there's another shop or two in talks with Mr. Kurosaki about carrying it.

I was not very happy with the Shizuku (the nakiri I had was OK), and I need to try the Sasame before forming any opinions, but I'm a bit ambivalent from first impressions. At least it looks cool.

  6. What's your ambivalence? I read the R2's by Kurosaki were quite thick behind the edge.

I'd really like to hear more about this one. Been seeing these pop up on his IG and I am very curious.

  10. Wow, that one rulez...

  11. Absolutely stunning. I would say it's more of a kensaki yanagiba though not so much a kiritsuke. Really like the idea of the detachable handle. And heck it's a beast of a slayer.

  12. That kasumi yanagiba looks amaizing waiting to see what you think of it.

  13. It is a mizu honyaki and not a kazumi.

I really like these removable handle concepts. Stunning knife as well

  16. Tilman Leder, 240 Gyuto in Niolox ... actually 245 at the edge.

Handle is Cocobolo, with blonde horn ferrule ...

About 53 mm high, nice large flat spot and a gentle curve, fairly thin behind the edge, weighs in at about 200 grams. This are Tilmans pics, need to master the choil shot first to give you guys what you want LOL.

Haven't really used it yet, just demolished some carrot sticks that my wife forgot on the counter.

It's my first custom, but can't say much about grind and finish, I just gave Tilman a few specs and then let him do his thing because I am a believer in custom makers having their own style and I don't want to "force" them to make something that is not something they would usually do. Asked him to give me some specs.

Very nice, Esteban! Congratulations. I really like the looks of that knife. Wise to let the man use his craft :)

  19. Birthday present from my wife. Was originally going to be a half dozen of very nice wine but we hadn't made it out to the winery and Mert still had this bad boy for sale.

Feels great in the hand. Only used it to dice some shallots so far.

And a couple of family photos.
