    It's great to be here and partake of all this knowledge! I'm kind of a dinosaur; after 15 years in the business, starting at the bottom, and 7 years as chef/owner of a restaurant in Berkeley CA, I got the hell out! That was 1988 and now that I don't have a menu to write every day, or worry about whether the dishwasher is going to show up, I love cooking again. Although I appreciate the art, to me a knife is a tool. I discovered Japaneses knives late in the game, just a few years ago and find them a revelation to use. I also enjoy sharpening, especially making some POS a useful tool again.
