230mm Western gyuto with ringed gidgee

    This is a custom order I have finished recently , it's a gyuto forged from 52100 with a slight asymmetric right handed grind and good distal taper . Handle is brass and my favourite timber , ringed gidgee from Peter Cheal , the timber joint .
    It weighs 207 grams , 3.2mm thick at spine with only minor flex at the very tip ( .73mm inch before the tip ) 53.6 mm tall and flatter and pointier compared to the my usual profile . I am very happy with the way it turned out and its cutting performance. It is properly thin behind the edge
