    This is one of my favorite gyutos. Used in a professional environment, but not heavily as I rotate through quite a few knives. I will say that it has seen more use than some others I have, but that's just because this knife kicks ass.
    The only reason I'm selling it is because I have another from Ian that he just finished. This is where the wife's law of "understanding" comes in play- When one comes in, one must go. As much as I'd love to have 3 Haburn knives on hand, it makes sense (in the theme of variety) to let one go for another. And yes, I currently have two from Ian. I think everybody should.

    The knife has been thinned, by Ian himself.
