    Still T-Day out here, hope you all had a good one. I spent most of the day on several beaches, dinner was a 16oz grass fed angus sirloin steak with caramelized Maui onions, garlicked spinach, and oven-roasted fingerling potatoes with rosemary and Hawaiian salt. Take that, overbred tasteless frozen ball of poultry with overly sweet sweet potatoes, gooey mashed potatoes, glibbery cranberries, stale bread stuffing, over-starched and oversalted gravy, 1950s bean casserole with canned soup, and cloyingly sweet pies made from overrated vegetables.

    Come on, Stefan, tell us how you really feel. :) Had the best turkey dinner, I think I've ever had. All the above mentioned classics, the wife hit right out of the park. YUM, YUM! Happy thanksgiving to all my fellow knife nuts, be safe, have fun, give thanks. God Bless!

    Lol Stephan and Al. I brought up the idea of classic string bean casserole to my family. I was almost assaulted. Dinner was a little late. I worked late the days before and let my kids help me cook. That's an extra hour or 2 right there. Well worth it.

    Say what you want, with correct execution the green bean casserole is fine thing to eat. Making your own cream of fill in the blank isn't that hard, and crispy shallots fill in for the durkee onions.

    My mother made an oyster dressing this year that absolutely ROCKED!
     
  11. Green beans don't get enough respect on our menu since my family never served them. But to my brother in law they are a mainstay. For years we did sauteed in butter with toasted almonds. Last couple of years I served them with a sauce gribiche - that's earned a couple of converts.
