    Chef. These both are ultra light. and have slimline handles that are highly contoured and coke bottle shaped. They feel "fast" in hand, for lack of a better term.

    If I had a choice of the three, that would be the one I would pick. Love the "Gem" shading, if you will. Really makes the burl pop!

    The photos on the Gem maple really fought me. Today I took a few in natural light that better show this wood. :)
