  1. Here's a new one for me. It's a 220mm San Mai Gyuto with 52100 core and 1080 & 15N20 Topography Damascus cladding. It features an bilateral compound grind and forged integral bolster with a kurouchi style finish (black blade with polished cutting edge). The western handle is sculpted from stabilized Chechen Burl and features stainless steel spacer and monogrammed pommel rivet hardware.

Here's a closer look at the blade finish.

Though it looks like polished bronze, this monogrammed pommel rivet is stainless steel. Curse you shop lighting!!

Now a look at the presentation side (the side with my maker's mark).

    I hope y'all dig it!

Love this . Slightly different profile? Forgive , but could you please elaborate on bilateral compound grind? Just used your slicer tonight . " like budda"

  5. It was just another way to say symmetrical "S" grind. I'm glad that beaut is treating you well.

  6. This might be one of my favorites I've made to date too. It'll go on my list of ones that got away.

Amongst all that beauty there seems to be a real cutter, as well. Your work is mind boggling, sir! :cool1 :pop :jump :argo
