The BoardSMITH's Small Knife Collection

    For those who know me, they know I am not as into kitchen knives as a lot of others are. I admire fine steel and I have a small idea of what a good knife should be. So over the past few years I have found these I really like and have given a home to.

    I received this from a customer in Spain in a trade. This is a 10" Artisan Chefs knife that I really enjoy. I like the balance, the length and how it feels in my hand. Not long ago Dave Martell did a spa treatment on the knife and added a custom ironwood burl handle with red spacers and copper pins. I was overjoyed. That is until my wife washed it in the dishwasher, twice. But the story has a happy ending, Dave was able to rescue the handle and it is almost as bright now as it was when new.

    This one is a Wantanabe nakiri I received from Joe the one-eyed turtle when I made a 9 slot cleaver block for him. I have forgotten what the woods are for the handle but I know it was the last handle Fish-and-Poi made. (He was one of the original posters on KF and made some beautiful knife handles.) Again, I like how the handle feels in my hand and the balance is spot on for me. It is used but not much, this is one I really take care of and since it was the last one Fish made.

    This is an Ealy paring knife I received late last year. I have never met Del and have only spoken with him a few times on the phone and first saw a paring knife of his in Nov 2012 in DC at a show. I was impressed enough at that time to remember to get one in the future. Fine craftsmanship in the blade and handle.

    Very nice! love the Damascus on the Del, and the angles in the Wantanabe handles are awesome.

    Very nice collection David. I about cried when I saw the photos of the recently dishwashed Gyuto. Glad to see it back in shape again to enjoy

    All you need is 270 or 300 mm slicer from Butch and you will be set for life!

    Jim - I almost disowned my wife when I saw what happened to the Artisan. I thought it was really lost. But Dave did a marvelous job and it is almost back to original. Maybe just a little darker though.

    WildBoar - If I could afford a Butch slicer I would jump in. Maybe one day when I hit the lottery.
