  2. Hi Jim,
    Stumbled on your site, thought I'd join. I'm not very adept at social media, but I do like cooking toys, knives in particular; Many Forschner, several Shun (including set of 3 Japanese style), a lone Henckels, and a pair of stupidly expensive chef's (7.5", 9.5") cast knives (not forged), made by Boye in AZ.
    When I'm not chopping, fly fishing for bass in the SF Delta is pretty cool!
    Anyway, what I hope to learn here is- correct maintenance and sharpening techniques for my good knives, and possibly make some upgrades-maybe Japanese style, or an old carbon...who knows? I already have more knives than I should. I'm waiting for the arrival of a Forschner 10" breaking, and I want a few more paring knives (any suggestions?) . I'll probably be looking to get a nice sharpening system at some point (stones, ...?)
    Damn, Denver just won☹️ Gotta go.
