Discussion in 'The Kitchen Knife' started by Antonio, Feb 20, 2014.

  1. A saya nomi is for carving out the channel in the wood for the blade to sit into. The elevated handle allows for better control and accuracy, as well as chasing around the curves in a smaller kitchen knife saya (spine, tip, etc).

I'm about to make a few of them myself...I don't think they'll be as pretty as Luke's...but even so...they'll work :p.

Its for chiseling out the cavity when making a saya for a knife or sword.

  4. I've used it a bit more now and I'm still happy. :) It's a thick blade but it still cuts well. Diced a bunch of onions today. A thinner knife will work better for this and just "fall through" but I was still impressed by how the tip of this knife went through with the vertical cuts. The horizontal cuts, not bad but not super good either because of thickness.

Also, couldn't stop myself from ordering the mega nakiri from the same maker. :D

    Toyama Noborikoi Kasumi Nakiri 210
    Length 210 mm
    Height 65 mm
    Weight 272 gram

I like it very much. Perfect balance for me and my pinch grip, so I can hold it and be relaxed.

Here alongside the gyuto and some other nakiri knives.

That nakiri is super sized for sure ! What's the bottom one in the last group pic?

  6. Check out the link to the google drive folder I posted. One of the group pictures has labels in it. Anyways, it's a small Murata nakiri, length 135 mm, height 42 mm.

Cris took some fine photos of this knife already so this is a bit redundant:

It's definitely a beautiful knife and the handle really worked out for me.

This one might classify as "too thin" to some people:
The chunky knife on the bottom is a Sakai Yusuke "extra thin".

Just realized the pic had zero reference, so here's a coin (similar size to an American cent):

(and again, Anderson top, Yusuke extra-thin bottom)

  18. Shig Kitaeji Nakiri?

    :er

  19. Hah, I wish. I do have a Kitaeji coming, but that won't be here for another month or so. Hence I needed something to hold me over. Just a humble KU Santoku. This one might get rehandled.
