  3. A classic Takeda nakiri arrived just in time for Thanksgiving prep. It blazed through piles of mushrooms, celery, and green onion for stuffing. It's thinner than expected and has a bit of flex which surprised me. I'm loving the performance so far and I'm pleased with the dimensions.

    I haven't posted my thoughts on it publicly because there's some variation in the various testers and early models Robin's done, and they won't all be comparable.

    The knife I played with inspired an order, so that is something. I also don't really want to send the little tester back. It's a really fun blade.
     
  5. Damn, that's a fine looking knife. "I should get me a Takeda", I keep thinking that but for some reason I never pull the trigger...
     
  6. Got me a new Shiro Kamo gyuto, kiritsuke style. Very thin, very light, very reactive. :p Well, at least as reactive as a Konosuke Fujiyama, if not worse. Still, I like it very much. It's a 240 but only weighs 151 grams, with a pretty small handle to balance it right. Incredible tip on this knife. Bought it from Cleancut, and I'm glad I visited their store in RL for this one, because there were some rather significant (as I consider it) variations in profile between the "same" knives. Some of them were some millimeters shorter at the heel, but seemed to grow taller forwards, making it look a bit like a long hakata. Strange. I selected a blade with a more conventional profile, I think.

  11. Yeah it really does look nice. I love the bandaid. Nothing is worse then a serrated knife cut.

    Güde is pretty good for crusty bread. I have heard about it for a long time, but haven't had much interest in it until I started baking sourdough at home a couple of months ago. With current exchange rate, a walnut handle one like I bought should be just under US140 from Germany.

    Yes, € 159 at knives from Germany shipped free to many countries. US buyers do not have to pay tax, so that comes down to under € 130 with their 5% discount on paypal.

    Pretty good deal.

    Robert Herder 1922 carbon steel 23cm, could get for €130. Tip is a bit lower than with modern Germans, balance point very slightly in front of bolster / fingerguard.
     
  16. These arrived yesterday from Butch. The top one is a Christmas present to my niece. The other two are presents to me from my wonderful wife. The heavy handled boning knife was a special request. I wanted a really secure handle and Butch nailed it. The cimeter steak slicer was an impulse buy I can't wait to try out. Perhaps on tomorrow's prime rib. -Doug
