    a cheese and spinach soufflé. I don't get the rise I am hoping for. they are PDG, and fluffy, but not as airy as some I've had prepared by others.
    Wonder if I'm not using enough heat, or if it is too heavy, or egg whites too stiff? Maybe soufflé are something you should follow the recipe on....

    Asparagus is starting to come in and is wonderful, so cooked a little lamb on the side. Love food with a built-in handle!

    I saw this earlier today and wouldn't look again until after I ate dinner so
    I wouldn't spoil mine. I don't think anyone's ever cooked me chops that looked that good. Slow oven, mustard crusted and finished hot? Dang!

    Lamb is one of the few things I put in a really hot oven--preheat to 500 degrees, and (this is IMPORTANT!) turn it down to 400--done in 18-20 minutes. It will burn the living tweedle out of you if you touch the oven putting it in, tho.

    Add enough cheese and just about anything will taste good.

    Looks great Lucretia. I've only had lamb a few times and for some reason gun shy about it. Is it typical to have it rare?
