I smoked a corned beef brisket and was pretty happy with the results.

Mike, does red flannel hash qualify as health food with beets in it? Your corned beef looked juicy !

It was really juicy, Mike, tender and had a great smoky taste. I had it on the smoke for about 4 hours, then wrapped it in foil for another 4 hours. Health food? Sure, why not?

Potato pancakes. Should have taken a pic sooner. What's left from 5 pounds of potatoes. So much for leftovers . image.jpeg

@Mrmnms That is a spectacular looking roast! I impulse bought a 4 bone prime rib roast we are doing next weekend and can't wait. I don't have anything near as nice as that Maumasi(by the look of it) to slice mine with however.

Nice looking ribs, Mike. I had these two kgs, a kg a piece, of T-bones on gas grill last weekend. Didn't have time to start charcoal fire, but gas would do on a rush day.

Bucatini with shrimp and clams. Garlic, shaved fennel, jalepeno, capers and lemon zest. Star of the dish was some killer home made pancetta from my knife brother that went in first. Could have almost left everything else out . image.jpeg
